Slow-Cooker Mediterranean Diet Stew Recipe

This delicious and healthy stew recipe is packed with Mediterranean-inspired flavors and ingredients. It’s an easy and convenient way to get a nutrient-rich meal on the table, and it’s perfect for busy weeknights.

Ingredients:

  • 1 pound boneless, skinless chicken thighs, trimmed and cut into bite-sized pieces
  • 1 large yellow onion, chopped
  • 2 garlic cloves, minced
  • 1 can (14.5 oz) diced tomatoes, undrained
  • 1 can (15 oz) chickpeas, drained and rinsed
  • 1 can (14 oz) artichoke hearts, drained and chopped
  • 1 cup low-sodium chicken broth
  • 1/2 cup pitted Kalamata olives
  • 1 tablespoon dried oregano
  • 1 tablespoon dried basil
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 cups baby spinach

Instructions:

  1. In a slow cooker, combine the chicken, onion, garlic, tomatoes, chickpeas, artichoke hearts, chicken broth, olives, oregano, basil, salt, and pepper.
  2. Cover and cook on low for 6-8 hours or on high for 3-4 hours, until the chicken is cooked through and the vegetables are tender.
  3. During the last 30 minutes of cooking, stir in the baby spinach.
  4. Serve the stew hot, garnished with additional olives and a sprinkle of fresh herbs, if desired.
